Carbohydrates

    
CARBOHYDRATES can be divided into two families:
       The "FAST" CARBOHYDRATES which are assimilated
directly by the body right at the start of digestion (sugar, soft drinks, sweets, etc.).
Sugar contains no vitamins or mineral salts, it is taken in competitions for its immediate action.

        The " SLOW" CARBOHYDRATES which are first converted by the gastric juices and then stored as glycogen by the liver (pasta, potatoes, rice, cereals).

1 gram of carbohydrates provides 4 calories of energy.
Carbohydrates must represent about 55 % of our calorie intake.
